For Zorawar Kalra, a passion for culinary arts runs in the family. As the son of the renowned food critic, television personality, and food writer Jiggs Kalra, Zorawar has carved out his own illustrious career in the Indian culinary landscape.

Known for his role as a judge on “MasterChef India” and his appearance on “Jhalak Dikhhla Jaa,” Zorawar aims to present Indian cuisine to Generation Z as modern, affordable, and trendy. Given his remarkable success, he is undoubtedly on the right track to achieving this goal.

Zorawar Kalra’s Story

Massive Restaurants was founded by Zorawar Kalra in 2013. The company began with the launch of two innovative Indian cuisine chains in November 2013. Since its inception, Zorawar has adeptly expanded the business, adapting to the evolving preferences of diners. In an era where online cloud kitchens and delivery-only outlets are proliferating, the Boston business management graduate ensures his strategies are well-aligned with industry trends. He is making significant strides in revolutionising the cloud kitchen landscape in India.

The Massive Restaurants Portfolio

Massive Restaurants boasts a portfolio of popular establishments including Masala Library, PaPaYa, Farzi Café, Slyce, Bo-Tai, and Younion. These restaurants are celebrated not only for their exceptional cuisine but also for creating memorable dining experiences, as evidenced by the numerous social media posts from satisfied patrons. To cater to the growing demand for on-demand food and to adhere to post-COVID-19 safety protocols, the company is investing heavily in cloud kitchens.

A market study titled ‘India Cloud Kitchen Market 2023’ by consulting firm Wazir Advisors projects a compound annual growth rate of 24% for the sector, with the market size expected to reach $1.9 billion by the end of the fiscal year 2026. Currently, Massive Restaurants operates five centralised cloud kitchens, with plans to develop 12 more in the coming years. “The success of our cloud kitchens highlights their importance to our overall business model, as they currently generate a significant 40% of our total revenue,” says Kalra. He anticipates this figure to double within a year.

Foray into the Cloud Kitchen Sector

The company’s cloud kitchen brands include Louis Burger, Slyce, and NFC, with Louis Burger contributing approximately 75% of the cloud kitchen revenue. Among its brick-and-mortar establishments, Farzi Café is the top performer, accounting for about 70% of system-wide sales. Kalra projects a doubling of the cloud kitchen business over the next 12 months and a 20% growth in the offline business.

Massive Restaurants is experiencing robust growth both domestically and internationally, with 40 restaurants in India and 10 restaurants in eight countries. The international operations, particularly in the USA, United Kingdom, and Canada, contribute 30% to 40% of the system-wide turnover. These impressive performances are bolstered by the strong dollar, pound, and Canadian dollar currencies, respectively, as Kalra explains.

Financial Growth and Investment

The surge in food technology has led to increased demand for cloud kitchens. In the second round of funding in 2018, Massive Restaurants secured Rs 160 crore from Gaja Capital, bringing the total external funding to Rs 220 crore. While Kalra acknowledges the potential need for fresh funds to support the company’s aggressive expansion strategy, he also emphasises the importance of prudent financial management.

A Vision for the Future

Under Zorawar Kalra’s leadership, Massive Restaurants has pioneered the evolution of Indian cuisine by exploring progressive dining concepts and continuously establishing new virtual kitchen branches. His vision is to make Indian cuisine globally accessible while maintaining its authenticity and richness. With a focus on quality and innovation, Zorawar Kalra is not just adapting to the changing culinary landscape; he is shaping its future.

Massive Restaurants, with Zorawar at the helm, is on a successful trajectory, revolutionising the Indian cloud kitchen scene and setting new standards in the culinary world.
